Jake's Fish Chowda
Ingredients:
10 slices bacon
2 small onions, chopped
2 carrots, chopped
2 celery rib, chopped
4 tablespoons unsalted butter
4 teaspoons allpurpose flour
1 teaspoon paprika
2 10oz cans of chopped clams w/ juice
1 cup of heavy cream
2 baking potatoes
1 1/2 pounds firm white fish fillet
4 tablespoons of minced parsley leaves
In a saucepan cook bacon over medium heat until crisp. Place bacon pieces on paper towel to drain. Pour off fat. In pan cook onions, carrots and celery in butter over medium heat. Stirring occasionally until softened.
Sprinkle flour over mixture and cook, stirring, 3 minutes. Stir in paprika and cook, stirring, 30 seconds. Add clams and juice, water, and cream. Bring to a boil stirring occasionally.
While mixture is coming to a boil, peel potatoe and cut into 1/4 inch pieces. Add potatoe to mixture and simmer chowda, uncovered, 12 minutes. Stir in fish and simmer until just cooked through. About 5 minutes. Stir in parsley, bacon, salt and pepper. Enjoy!
